INGREDIENTS:
1. 6 tablespoons brown sugar
2. 1-16oz. bag of dried fruit
3. 1 teaspoon cinnamon
4. 1 teaspoon nutmeg
5. 1/2 teaspoon ginger
6. 1/2 teaspoon cloves
7. pinch of salt
8. 2 cups self-rising flour
9. 2 small eggs
10. 2 tablespoons grated orange peel
11. 2 tablespoons grated lemon peel
12. 2 cups brewed orange pekoe tea
13. Honey
DIRECTIONS:
Soak the fruit overnight in the tea. The next day drain excess tea off fruit and add the spices, eggs, sugar, grated lemon and orange peels and flour. Spoon mixture into greased 9x5 loaf tin. Bake at 350 degrees for 1 3/4 hours or until center is done. If the top of the bread becomes too brown cover with tinfoil. Remove bread from oven and let stand 10 minutes. Flip bread onto a cooling rack and glaze the top with honey. Slice and serve with butter and orange marmalade.
